Cranberries and Boughs Centerpiece

When creating a centerpiece for your holiday buffet table, look no further than the foods and foliage readily available during the season.

For our stunning arrangement shown at right, we relied on fresh cranberries. The crimson color of this tart berry is so beautiful. (To carry that hue through on the table, we opted for cranberry-colored napkins.

To fill out the vase, simply snip some boughs from your Christmas tree or garlands. (We used both juniper and blue spruce branches, but you can use whatever boughs you have available.) Also feel free to tuck in some sprigs of holly or baby’s breath and some white roses, lilies or daisies.

For the finishing touch, add a gold cord bow at the top of the vase.

Baking Cakes at High Altitudes

High altitude (over 3,000 feet) has less air pressure and drier air. These conditions affect baked goods. The lower air pressure allows the gases created by the leavening agent to expand more quickly and causes liquids to evaporate and boil at lower temperatures. The drier air also dries out the flour.

For cakes, this means that there might be excessive rising from the gases produced by the leavening. This could cause the texture to be coarse or the cake to call before the structure is set by baking. Faster evaporation of the liquid, due to lower boiling point, would reduce the amount of liquid and increase the concentration of sugar. This higher sugar concentration may also weaken the structure of the cake.

Some measures to take for butter cakes are to increase the oven temperature 15° to 25°, which allows cakes to set faster and prevent falling. Fill baking pans half full not two-thirds full, since cakes rise higher. Reduce the leavener and the sugar and increase the liquid. Here are some general guidelines for adjusting ingredients for butter cakes.

For foam cakes, only beat the egg whites until soft peaks form. To strengthen the structure of the cake, decrease the amount of sugar by a tablespoon of two and increase the amount of flour or egg component of the cake a little. Increasing the oven temperature by 15° to 25° will also help set the cake structure sooner.

Bake at 350° for 15 minutes or until toasted, stirring occasionally. In a large bowl, combine the egg, butter, honey and vanilla. Stir in the sunflower kernels, coconut, apples, cranberries, brown sugar and cinnamon. Stir in oat mixture. Firmly press into a 15-in. x 10-in. x 1-in. baking pan coated with cooking spray. I made this recipe today for the first time. The bars are excellent. I followed the recipe exactly and had no problem at all with the bars crumbling when I sliced them. My husband sampled one and said they are as good as his favorite granola commercially available bar which is the "Seattle's Favorite Granola Nut Bar". I will definitely be making these again. We dry our own apples every fall and I had some left so I was able to use our own apples.

Great recipe !! I might suggest if you feel the ingredients are pricey, that you find a Sprouts store or other health oriented store that sells these items in bulk. then you can buy only what you need and have a large selection of items to add .

I did not make these although thye look and sound delicious. The deterrent for me was the expense of the ingredients. Almonds, cranberries, sunflower seeds, and honey all contribute to making these budget prohibitive for me and I would guess many others.

Five stars for this granola bar recipe. I have made these multiple times. I have never had these granola bars crumble. If we are out of these granola bars, my family begs for more. I use slivered almonds, chop up the dried cranberries and dried apples. I mix up the coconut, almonds, sunflower seeds, and dried fruits. This makes sure the cranberries are not clumping together. I add the ingredients in this order:melted butter, honey, vanilla extract, brown sugar, cinnamon and then the egg. Next, I add all the dry ingredients except for the oat mixture. I mix this until well incorporated. Last, I add the oat mixture. I firmly press them in the pan with a metal spatula. The granola bars come out perfect every time. I cut the bars when cooled and place on waxed paper in a plastic container with a lid. I store the bars in the refrigerator.
