Yield: 6 Servings 20 20 Ingredients 12 ounces cream cheese, softened3/4 teaspoon garlic powder1/4 teaspoon seasoned salt1/4 teaspoon celery salt1/4 teaspoon dried basil1/4 teaspoon dried thyme3 tablespoons coarsely ground pepperFresh parsleyAssorted crackers Directions In a small bowl, combine the first six ingredients; refrigerate for 30 minutes. Shape 1 cup mixture into a tombstone; coat with pepper. Place on serving platter. With the tip of a sharp knife, write "RIP" on the tombstone. In front of the tombstone, shape remaining mixture into a mound. Sprinkle with pepper; press parsley into mound for grass. Serve with crackers. Yield: 1-1/2 cups.

Fun and effective, not too difficult to make, this recipe is great for Halloween parties. My tombstone did keep falling forward so I braced it with a cracker at the back. I added roasted garlic to it and wow, lots of flavour in this one. I only used one package of cream cheese though which I believe is 8 oz and everything was fine. Leaves you with dragon breath though! Strong!

Lightening Up Soups

It's easy to bring smile-fetching soup to the front burner of a food-smart meal plan. Keep the following secrets in mind when you're lightening up your soup du jour.

Skip the Salt- Set down the salt shaker and stir in additional herbs or a salt-free seasoning blend into your soup instead. When recipes call for canned chicken broth, substitute the reduced-sodium variety.

Thin Thickeners- Watching your weight doesn't mean writing off creamy soups. Puree a cooked peeled potato and reduced-fat milk or fat-free half-and-half to a creamy consistency. Slowly stir the mixture into the heated soup to thicken it. Then heat through, but do not boil. To thicken southwestern soups and chili, add pureed cooked beans.

Cut Back on Beef- Try preparing a recipe with additional vegetables or pasta in place of beef. Or, consider replacing beef with cooked poultry now and again.

Making a Pastry Crust for Cheesecakes

Prepare crust according to recipe directions. Remove the bottom from a springform pan. Pat about half of the dough onto the bottom of a springform pan. Or, if recipe directs, roll out half of dough, then place on bottom of pan and trim to fit. Bake as directed.

Cool completely. Attach sides of pan and grease sides. Pat remaining dough 1-1/2-in. up the sides of the pan and press onto the bottom crust along the sides of the pan.

Yield: 4 Servings 20 45 65 Ingredients 1-3/4 cups sliced fresh mushrooms1 garlic clove, minced3 tablespoons canola oil, divided1 can (14-1/2 ounces) diced tomatoes, drained1-1/2 teaspoons dried oregano1 teaspoon sugar1 teaspoon dried thymeSalt and pepper to taste1/2 pound lump crabmeat or imitation crabmeat1/2 pound bay scallops1/2 pound uncooked small shrimp, peeled and deveined1 cup cooked long grain rice3/4 cup shredded Parmesan cheese Directions In a large saucepan, saute mushrooms and garlic in 1 tablespoon oil for 3-4 minutes. Add the tomatoes, oregano, sugar, thyme, salt and pepper. Bring to a boil. Reduce heat; cook and simmer for 30 minutes. Uncover; cook 10 minutes longer. Remove from the heat; stir in crab. Meanwhile, in a large skillet, cook scallops and shrimp in remaining oil until shrimp are pink and scallops are opaque. Divide rice among four individual baking dishes. Top with shrimp and scallops. Spoon tomato mixture over rice and sprinkle with Parmesan cheese. Bake at 350° for 10 minutes or until heated through and cheese is melted. Yield: 4 servings.

I found this recipe years ago and enjoyed it immensely. Somewhere along the way the recipe was lost. Thank you TOH for publishing this again. As for the lady worried about expense of the meal, I've used canned crab meat and only used the lesser expensive shrimp for the combination of scallops and shrimp. I fixed this last night as written and it is a DELIGHT!

It sounds wonderful, reminiscent of some New England restaurant dishes that I've experiences. I think most of us can't afford it though. I can't buy scallops, shrimp, and lump crabmeat because the cost would take most of my week's food budget! However, if you are lucky to live close to seafood docks and warehouse outlets, this surely would be great!
